RECIPES AND COOKING IDEAS
Growing up, there was very little winter squash available. Most Long Island groceries in the 1970's had a very limited produce selection. When I became produce manager at the Genesee Coop Foodstore in Rochester, I was overwhelmed with the varieties the local farmers brought to the store. I went on a squash binge, sampling the many varieties.
My favorites then and now are delicata and sweet dumpling squash. Both are sweet and have a nice flavor. Their small size also makes estimating portions pretty easy. My favorite way to prepare delicata or sweet dumpling squash is to cut them in half, scoop out the seeds, place them cut side down on a baking sheet and bake them for 40-50 minutes in a 400 degree oven. I often roast garlic at the same time. When the squash is done, scoop out the flesh, add a little olive oil and roasted garlic to taste and put the puree back in the skin. If you have fresh sage or thyme both work well with sweet squashes.
